[Sca-cooks] olives/olive oil question

A message from a Florilegium reader made me start thinking about
olives. Previously we've discussed the fact that fresh olives
need to be processed before they are edible, or at least taste
good enough to eat. What about the oil? Is olive oil pressed from
fresh olives? Or from those that have been processed? If fresh,
then how come you can eat the oil with no problem, but the olives
need to be processed?
