[Sca-cooks] OP - Coffee 'n' Spice Pecans

I realize that this is a modern recipe, however when I mentioned this
recipe of Phlip last weekend, she was interested in seeing it. I
thought that some of you all might also be interested.

I've just made these. I used a light brown sugar. And in re-reading
this as I typed it in, I realized I forgot to toast the pecans
before making this. That might make them crisper and change the
taste a bit. The coffee taste is not as powerful as I expected.
The is just..different. Not bad. Just different. I'll be waiting
to see if the taste changes any after they've cooled off and sat
for a while.

Coffee ‘n’ Spice Pecans

1 Tablespoon instant coffee granules
1/2 cup sugar
1/2 teaspoon ground cinnamon
dash of salt
1/4 cup water

3 cups pecan halves, toasted.

Combine the first 5 ingredients in a medium saucepan, stirring until
sugar dissolves. Add pecans and bring to a boil. Cook 3 minutes, stirring
constantly. Spoon onto wax paper, seperatingpecans with a fork. Cool.
Store in an airtight container. Yield: 3 cups.
