I sometimes use evaporated milk instead of coconut
cream/milk in curries. I do love my coconut cream,
but it is SO high in saturated fats. If you use
evaporated milk and a drop or two of coconut essence
you get a similarly lovely creamy texture, (and
sometimes cooling effect) taste, and nowhere near as
much fat.
If you use a "skinny tinny" ie. a low fat evaporated
milk, then it is even better.
I am not usually one for this sort of substitution,
but diabetes and a weakness for Indian, Malay and
Thai food made this substitute my friend...
