Well.  My statement on all this is that some of these recipes in the 2
chinese sources are wide open to interpretation so my approach is to
pick a stance and try it, lest we get into a "cuskynole-esque" (I'm
sure you ALL know exactly what I mean) debate over exactly what the
recipe is supposed to construct.  I still think my approach for doing
it was a soup was valid (why would you go to all the trouble of making
the stock and then failing to use it all?), I don't think the
marinading did much more as opposed to just dumping the lot in the
stock.  But I do agree that I have to more research into appropriate
picked ginger recipes. I'll try the one in CHFR, as soon as I have
some Rice Wine Lees.

I don't mind your approach at all.  It made me think a bit harder
about every assumption...

More opinions from the masses on our redaction are heartily requested
please... I'd be keen to know what Paul and Eugene reaction to the
redaction would be?

Agreed.  Perhaps not redacted enough to be truely 100% authentic yet,
but hey, it's so tasty the masses wont complain as they are shovelling
it in...
