[Sca-cooks] OOP: How to use a chafing dish?

I used to work at a place where we'd scoop the sterno out and put it in
little mesh containers.  The mesh regulates the burning by breaking up the
flames a bit.

Buy a large base column glass candle holder, they'll fit the bottom end of
the Sterno can, and are lower profile than the chafing dish.  (you know, the
decorative ones, small  glass square with a lip, you can get them at
Walmart - in the isle with the vile scented candles).
It keeps the hot sterno from hitting  the table-top if the dish is bumped
and setting anything remotely flamable ablaze
because the dish catches the spillage and it either flames out or cools down
and gels.
(like the top of those folding tables that every rented feasthall has, they
burn nicely.  ...and yes, I have tested this...)
