In addition to all the things you'd normally do with large, globe
artichokes, they're also good deep-fried, trimmed a bit as for other
uses. (You quarter them and remove the "choke".) You can trim them
radically, almost down to hearts, and batter-dip and fry them, as is
sometimes done with an Italian frito misto, or just fry them like
potato chips.

Also good sauteed with garlic and butter or olive oil, again,
properly trimmed of stem, tough leaf tips and the "choke". I suppose
they could also be eaten with hollandaise sauce, mayonnaise, or
aioli, like larger artichokes, but they're kind of small for that
kind of presentation. Generally you don't expect to eat these
leaf-by-leaf, as with larger artichokes.
