[Sca-cooks] OOP - Caponata recipe?

Howdy,

Anyone happen to have a recipe for caponata (italian eggplant
appetizer)?  I've got several beautiful eggplants ripening in the garden
and need to preserve them (the wife's on the Atkins diet and I don't
want to torture her).  I've also got a whole bunch of jalapeños too, but
I can just pickle those.
