This is how my mom served it. A bowl of baked beans with a hard boiled egg on
top and a slice of white bread with butter (not toasted) on the side to
supposedly scoop up the beans and egg. That was how she ate it. I usually ate
the bread and nibbled on the egg. Wouldn't touch it now with a ten foot pole.
As for being a WWII holdover, I have no idea. My grandmother never served it
as far as I recall. I think it may just have been because my mom was on and
off welfare for most of my childhood and that meal was cheap and filling. Now
I am wondering what types of meals my grandmother served during the war. My
grandfather was captured at the Battle of the Bulge and put in a prisoner
camp. My grandmother was left with a new baby (my mom) and no idea if my
grandfather was alive or not. She probably didn't have much money and food
items were rationed. Hmmm.... food for thought!
