Hi Apollonia,

My first cheese was a yoghurt herb cheese.  Basically, take 1 pt. plain
yoghurt, a medium bowl, several thicknesses of cheesecloth and herbs to
taste.  Blend the herbs into the yoghurt until evenly mixed, then put the
yoghurt onto the layers of cheesecloth, gather the edges until you have a
bag. Tie off the top and hang it up, with the bowl underneath to catch the
liquid as it drains off.  In three to five hours, you will have a nice
spreadable tangy cheese.  If it's really hot and humid, you can hang it from
a higher refrigerator shelf, with the bowl underneath.
