To remove rancidity of venison, take the venison that is rancid & put it in
cold water & afterward make a hole in the hearth/earth & let it be therein
three days & three nights; & afterward take it up & rub it well with great
saltpetre there where the rancidity is. & afterward let it hang in rain
water all night or more.
