I like to use small zukes (less than 1" diameter) for slicing *real* thin,
then briefly pan fry in olive oil.  Then use that to create a new set of
"scales" on white fish, such as halibut or like fish.  Served on a tomato
puree, makes great eye appeal and it's kinda cool.

Basically, you lay down the slices on the fish and you space it, a little
bit like chain mail, but.  well... not quite...  you know? :-)
