I have a copy of the 1508 in facsimile and there
are no carving diagrams in it. In fact de Worde only includes
a beginning illustration of people gathered around a table.
Then follows 24 pages of black letter text.

I suspect that you are going to have to go later rather than earlier in
terms of illustrations, maybe 17th century. It was a trade that was
learned by practice and again not by manual.
The Carving here afterall was for the table, not for the kitchen.
