[Sca-cooks] Flambe?

[Randall Cook of Northpass]

I only find two references in the Florilegium to flambeed dishes - one
appears to be an OOP Christmas pudding, and the other is an interpretation
of an unclear instruction in a subtlety recipe. Does anyone know of any
documentable recipes for flambeed dishes?
