I grew up with an electric range and oven, so I have no problem dealing with
it. I have lived in a place that had an old gas range (really annoying one
that did NOT have a pilot light for the oven - what a pain!), and have used
commercial gas stoves and ovens.
Frankly, I really don't see any difference in between gas or electric ovens.
They seem to me to work just about the same. The biggest difference with the
stove top is you have much more immediate control of the heat with gas - when
you turn the flame up or down, the heat changes immediately. With electric,
the heat goes changes slowly as the element cools or heats. I think this
would be the biggest problem with going from gas to electric - with gas, if
something's too hot, you just turn it down. With electric you often have to
remove the pan from the burner if you really need it to cool down fast!
