Because they're USEFUL. I'm talking about a set of lined copper pots for
daily use, not display pieces to hang on a pot rack. :-) The heat transfer
properties of copper are totally superior to that of just about anything
else you might use, and worth the investment, IMHO. NB: I am not a
professional cook, nor do I play one on TV.
