[Sca-cooks] gas vs. electric ovens and ranges

I did in fact mention a flame-tamer, although not by that name.  I own two, which I put on top of one another and still can't get my confounded gas stove to simmer and not boil.  Oh for a nice coil electric hotplate that actually goes LOW!!

I get around the lack of a simmer mostly by using an electric crock pot, which has the extra advantage that it doesn't heat up the house like a crock pot in the oven does.
