[Sca-cooks] Chocolatl Chip Cookies

As most on Cook's List know, I'm not particularly into
baking, mostly because I don't really like sweet
foods, but much prefer savory foods. OTOH, I am quite
capable of baking when I want to, and today I wanted
to.

I think we all know my interest in chocolate chip
cookies, and it's strong enough, that when we started
discussing celiacs, I thought I'd see that they
weren't deprived- after all, even the US Constitution
guarantees the right of liberty, justice, and the
pursuit of chocolate chip cookies.....

I took the alleged Original Tollhouse Chocolate Chip
Cookie recipe (it will be at the end of this posting)
that I had posted today, and instead of the flour,
used masa harina (white), used Splenda (for Margali's
low-carb diet) instead of the white sugar, and added
half a seeded chopped jalepeno and half a seeded
chopped hot cherry pepper instead of the nuts.

People, they are excellent !!!!! Lovely, delicate,
chocolate chippy, and the bit of hot pepper adds a
very interesting flavor- not as hot as you might
expect.

Now, this should work well for you celiacs, and using
the Splenda, might allow diabetics to eat them in
limited quantities (there's still brown sugar in
there, but this cuts the digestible sugar by half).
Granted, too, most of you might not want the hot
peppers, but hey, that's up to you ;-) The kid with
the milk allergy should be able to eat them if you sub
in margerine (shudder) instead of butter.

And, as usual, Bonzer helped. Digging through
Margali's cupboards for the ingredients, he was Right
There (Rob, her husband has an interesting storage
practice- if it fits well enough that it doesn't fall
before he gets the door closed, then obviously, that's
where it goes ;-)

I think, next time, I might reduce the Splenda, if I
use it- it's just, to my taste, a bit sweeter than
granulated white sugar. I think I'll also increase the
amount of hot pepper slightly, and add some in yellow
as well as red and green- the only yellow ones I had
were habaneros, and I thought they'd be a bit strong
for what I was trying to do. Were pretty, though, as
is ;-)

Mrs. Wakefields Original Toll House Cookie Recipe

       2 1/4 cups all-purpose flour
       1 teaspoon baking soda
       1 teaspoon salt
       1 cup (2 sticks) butter or margarine, softened
       3/4 cup granulated sugar
       3/4 cup packed brown sugar
       1 teaspoon vanilla extract
       2 large eggs
       1 2/3 cups (11-oz. pkg.)
       1 cup chopped nuts

       PREHEAT oven to 375° F.

       COMBINE flour, baking soda and salt in small
bowl. Beat butter, granulated sugar, brown sugar and
       vanilla extract in large mixer bowl until
creamy. Add eggs one at a time, beating well after
each addition.
       Gradually beat in flour mixture. Stir in
morsels and nuts. Drop by rounded tablespoon onto
ungreased
       baking sheets.

       BAKE for 9 to 11 minutes or until golden brown.
Cool on baking sheets for 2 minutes; remove to wire
       racks to cool completely.
