One word of caution. Only recently has the word,
"venison" come to mean only deer meat. Originally, and
this goes back as far as at least late period, it
simply referred to any game meat, so when you're
playing with historical recipes, even those from as
recently as the early part of the 20th century, keep
that in mind.
