Wines and Beers of Old New England by
Sanborn C. Brown
University Press of New England, 1978.

When you freeze cider you get applejack!!!
And that was quite a popular thing to do
when New England had reliable cold winters
and everyone had a cider press and apples.
Brown has an entire chapter on it.

Another paper on distillation is

Also see Harold McGee's On Food and Cooking
which ought to be on the reference shelf of
