Just about anything fried. In Ireland, it would be pancakes for what
they call Shrove Tuesday (you go to confession at the beginning of
Lent...). In France, it would be some kind of beignets or fritters.
One part of it is to use up the supplies of fat that will eventually
go rancid as the weather gets warmer over the next 40 days...
