Scappi has fennel recipes in his book.  You have to sweat the chopped
fennel bulbs in their own juice w/ a touch of water if needed -- a little
sofregite....

There was someone on this list (Daniel Phelps?) who was going to reproduce
Michelangelo's lenten menu: anchovies, spinach and fennel.  I've been on and
off the list, so I don't know the exact cook book he used, nor how his
dinner turned out.
