Do you want to talk about meat in Estonia
or meat in France or meat in general in
Western Europe?  What years do you wish to cover?
There is a lot of variation between what was
eaten in Italy in 1550 and what was eaten in the
Anglo-Saxon period in England. Narrowing the topic
will help with preparing ten minutes of material.
Do you have access to English language materials
or do you need sources on the internet only?

For books---
You might want to look at Toussaint-Samat's History of
Food which was Historie natureele & morale de la
nourriture when it was published in the original French.
See also T. Scully's The Art of Cookery in the Middle Ages
and C. Anne Wilson's Food and Drink in Britain which
contains a chapter on just Game beasts and tame beasts.
