I must disagree...game meat is relative, where did you
get the meat?  There are a lot (less now than a couple
of years ago) of ostrich/emu farms (especially in
Califnornia).  These are domestic and well inspected
ranches.  I prefer my ostrich and emu med rare at
most, leaves it very tender.
