I have one of those electric dehydrators, and the instructions
remind us that chicken, unlike beef and fish, ought to be cooked
before drying. Presumably it's that old salmonella thing... maybe
with free-range, hand-slaughtered chicken it might be okay to make
jerky in the more traditional way.
