Last night, waiting for the aspirin to kick in, I started leafing through
Take a thousand eggs and looking at spicing. I didn't chart all the
spices, but for the first 77 or so recipes in volume 1, I found the
following:
19 used pepper
7 used cubeb or grains of paradise
29 used saffron
17 used cloves
6 used galingale
30 used sugar
46 used salt
10 used mace
17 used cinnamon
30 used ginger
37 used various herbs, but that counts things like 'Joutes' where the
herbs are the main ingredient, and mentions of parsley.
