11 people to serve 8???  I think he's the crazy one, unless he intends to
have each member of the party at head table have a server hovering over their
shoulder at all times, plus one carving, one fetching drinks, and one doing
god knows what else.  While that would be a truly decadent level of service,
I'm not sure that's necessarily a wise use of manpower....  Surely one can
adequately and even luxoriously serve 8 people with no more than 3-4 servers?
