[Sca-cooks] QUICK STEAMED BUN QUESTION

I'm not Chirhart, but I am (one of)his apprentice, but I can answer that
question.  Yes.  Moist steam.  Use your bamboo steamer or, as you said, a
rack.  Just don't let the little things get soggy by getting in the water.
