It seems when I was reading through looking for turnip recipes I was finding
(before someones redaction) that it seems they were actually using the
greens rather than the root in many of the dishes.  Whoever did the
redactions simply used the root instead.  Even in Waverly it says that the
tops were favored and the root sent off to the barn.  Try substituting the
greens in some of those recipes.  I am not at home and have taken all my
cookbooks out of my office so cann't give you any examples right off.  Take
another look though.
