>Do you mix (cooked) grits with raw eggs and then fry it,
>or are both cooked first?

Both are cooked first and placed side by side on the plate.
Then the egg is briskly cut up and mixed with the grits. Apply
salt and pepper in copious quantities with a few sprinkles of
Tobasco Hot Sauce. Bacon, sausage or homefries complete the
destruction of the arteries. Coffee keeps the body working.

>This sounds wonderful, but I thought kale took a lot longer
>time to cook than spinach. Or is it still crunchy?

I tend to add them both at the same time. They are cooked over
very high heat and the kale is a bit al dente while the spinach
goes very soft.

The nice thing is that we can eat this as the main course and I
can have dinner on the table in 10 minutes. Sometimes I'll make
croutons and add them for fun. Like I said, it's always different
but we haven't been disappointed yet. Served with polenta it is
very hearty and filling.
