Not entirely a good option, there are an awful lot of paleo/low carb/ high
pro eaters in the fighter subset.

Also, I know a fair amount of fighters won't think of bread as protein.

Well, as to the chicken...I know I can disassemble a cooked cool chicken
using hands to separate the meat from the bone in about 5 minutes. I get
large and small muscle shards, as I tend to be shredding for using the meat
for things like congee, blancmange or fricassee. I could get larger more
integral pieces if I thought to do so...and used a knife for some parts. And
you pack the cooled chicken in zip locks and keep the bags in a cooler on
ice and dispense from the bags as needed. You can do the same with isiciia
[meatballs] but that essentially boils down to needing a server to tend the
buffet. If you don't put out hulking big bowls of beef/ham/sausage AND have
a server in attendance the fighter types don't quite pig out.

I suppose that kebobs are out? if something is on a stick, they tend to more
normal 'portion' control and take one or two instead of dumping half the
bowl onto their plate. You can precook the meat and just skewer it for
presentation.
