The confectioners amongst us may be interested to hear of a
manuscript/article in the latest Petit Propos Culinaires 69.

It is entitled "Confectionary Recipes from a Fifteenth Century Manuscript"
by Debby Banham and Laura Mason. The recipes were found in a ms amongst a
calendar and register (chronicle containing documents), from Spalding
Priory, Lincolnshire.
There are several culinary recipes written in Latin, which apparently is
unique, and "the only surviving culinary recipes that come from an english
monastic house".

The article also includes the Latin text and an English translation, for
what I would call;
- Walnuts preserved in Honey & Spices
- Pears preserved in Honey, Wine & Spices
- Preserved Ginger in syrup
- Chalcanth (named so in ms - another ginger recipe)
- Chardequince (basically quince and honey paste with notes you can do the
same to make Chardewarden, Chardecrab and Chardedate, which I assume means
warden pears, crab apples and it specifies dates).

There is also an article "The Revenge of Cheese:Pantaleone da Confienza and
the Summa Lacticiorum" which is a detailed summary of the medical text
"Everything to know about dairy products" by Pantaleone, chief physician to
the Dukes of Savoy (amongst other things) which was published in 1477.
