Less like "pita" as we know it in the US, probably something more like a
lavash (a middle-eastern flat bread that's very thin, essentially the
predecessor of the ubiquitous and nasty "wrap").

What do you mean by "wrap"? I assume you are talking about the
bundles of food wrapped in a bread some type. But this would
seem to include everything from Tex-Mex Burritos to Egg Rolls
to Spring Rolls the things I saw in my local newspaper recently,
which were food mixes wrapped in lettuce leaves.

Why do you not like these? Or maybe it just some specific
wrappers or contents? I've been recipes for some pretty
wierd combinations.

One that I've like here at work was a "blazin' Asian fish
wrap. A fried fish with lettuce/cabbage? mix with a nice,
spicy sauce wrapped in a very flat tortilla thing. Today,
I'm thinking of having the Buffalo Chicken wrap with
Blue cheese sauce.

Like the sandwich, I still wonder why some kind of wrapped
food wasn't done in medieval Europe. They had flat breads
and contact with the Middle East. Or is the flat bread there
used more for scooping and not totally enclosing food mixes?
