If having specifically an Irish stew is not as big a concern as
having a stew-like dish, you might check this file in the FOODS-MEATS
section:

However, as Master Cariadoc notes, it appears that they did not use
many vegetables in these stews, other than a few root vegetables.
And it's not a matter of them doing it and simply not writing it
down, as adding more vegetables to these recipes would not have
made things so simple you wouldn't need a recipe.
