Huh? I've never had any problem simmering on a gas stove. Perhaps you
feed on your burners needs adjusting? As to the oven, I have had the
opposite experience- electric seems to heat faster than gas. The Gas
oven I used eons ago when I was first married had to be match-lit, and
you did so about 40 minutes before you wanted to use it. I learned the
hard way. And the gas oven at the house in Sutherlin is also slow to
heat (about 20 min.), but it lights itself. Edouard has actually used it
more than I- he might have something to add.

Given the choice, I would take a gas appliance any day. Even better, or
course, the big fancy ones we saw a couple of years ago at the home
show- 6 burners, a grill, side-by-side ovens, a deepfry/wok thingie...
and a price tag bigger than my first car. *sigh*
