Modern things I like to use:

Mobile phone - check: a godsend - I actually bought mine initially for the
sole purpose of SCA event running

Spreadsheets - check: another godsend considering how poor my maths and
accounting skills are.

Word Processing programs - used for creating organisation lists and
timetables. I do 'on the day' individual timetables for each cook and a main
one for me and the kitchen. They seldom get followed religiously, but it's
good to have an idea of how much of the plot you've lost <grin> or not!
Admittedly I'm a little uptight about list making (Keilyn calls me her
"organisation-apprentice" as opposed to her "party-apprentice" <sigh> how
dull!) but I like to have it all down in black and white. What is the
recipe, in what course, what pots to use, what serving dishes, what
garnishes, etc. If I'm ever hit by a truck I know they can get someone to
fill in for me with no worries.

DTP programs - used for menus, at a pinch WP programs will work, but I'm a
techno publishing geek by trade and like spiffiness.
