Well, I expect that by strict interpretation, one could argue that
they don't, and they pretty clearly don't when it is not a holiday.
So, they do occasionally eat meat and dairy together, they do eat
various treif items, but they did have a sort of cordoned-off area in
their kitchen cabinets for stuff like wheat flour, pasta, etc., and
they do seem to get heartily sick of matzoh after a week, so I
suspect they use it as their primary grain source during this period.
It's an interesting mix of observance and non-observance (probably
like my own brand of Catholicism), but it's consistent with, and it
allows them to keep their sense, of, their cultural identity.
