Effectively, a textbook for industrial cooking.  It has a number of very
useful tables, such as how much to buy for how much cooked weight, serving
sizes, tables which multiply ingredients needed by factors of 8, cooking
times for various meats, color charts showing rare, medium rare, etc.  It
also has a number of mundane recipes (all for 50 people) which can
none-the-less be very useful in determining how much you need of something
and cooking times.
My mom was able to order it for me from a small local bookstore with no
difficulty. Being a textbook, it is of course priced accordingly - something
around $50 about 5 years ago.
