Well, you will run into problems with dryness, I suspect, and then
there's the question of which cuts of beef have a suitable central
bone. Maybe a steamship round, which is kind of large. There are also
other ways to pre-cut a roast that doesn't have that femur structure,
I assume, but they wouldn't be, strictly speaking, likely to be
spiral.
