Has anyone found "period" recipes that are actually for rose hips?

How about this one from A book of cookrye.  Gathered by A.W. printed by
Edward Allde 1591 at London.

How to make a tart of Briar Hips
Take hippes and washe them, and boyle them in claret wine, and straine
them through a strainer, season them with sinamon, ginger and sugar and
make your paste and fil it up with the same stuffe.
