Dear List,

This thread coincides with a project I've started elsewhere to create a
searchable online culinary history library. This project will make such
gleaning of old cookbooks very easy.

Those who are seriously interested in helping to build such a resource are
welcome to join.  We are having difficulty deciding upon the proper
encoding (TEI, etc.- all alphabet soup to me), and welcome technical help.
