The best book still on the subject of flatbreads
is Flatbreads and Flavors : A Baker's Atlas
by Jeffrey Alford and Naomi Duguid which came
out in 1995. Elizabeth David's English Bread and
Yeast Cookery has a chapter just on "Bakestone
Cakes or Breads" as well as other recipes for
flat breads.
