I usually try to get them right off the boat, heads
on, when I'm in N. Carolina. (Key West, too.) I take
the heads, and any shells and throw them in a big
stock pot and let it simmer away until it's reduced by
at least half. Then about three strainings later
(colander or coarse mesh, fine mesh, then coffee
filter) I have a lovely shrimp flavored stock/soup
base. The coffee filter makes it very clear, and I se
it too simmer a few veggies, or maybe a few shrimp
bodies, as a lovely light, clear soup just bustin'
with flavor.

I also learned to eat and enjoy small fish and fish
heads from a Filipino lady I knew. She fries them very
hard in oil, until the little bones chrystalize. It'
funny- was able to find small fish, heads on for this,
in Ohio, but no luck yet here in Connecticutt.

Actually, it sounds pretty good. Shrimp is a powerful
enough flavor that it can stand uo well to other
strong ingredients....

I don't know. Much as I enjoy grilled meats, I've
never enjoyed grilled seafood as much as I do steamed
or boiled- and folk who get near my oysters with a
heat source are likely to get attacked by my skewer,
unless they're the big ones suitable only for soups.
