Um, Napa Cabbage is not bok choy, it is sio choy...
Napa has a wide, white stalk with a very pale green, almost white,
very convoluted leaf, and bok toy has a somewhat narrower stalk, with
a less convoluted, spinachy leaf, and looks quite a lot like Swiss
Chard, actually.
Are they supposed to be cultivars of the same species?
