I'm not really sure which ingredients will keep this way, and which

ones won't, but you might look at these files:

beans-msg (119K) 6/ 9/00 Medieval, old-world beans. Recipes.
http://www.florilegium.org/files/FOOD-VEGETABLES/beans-msg.html

peas-msg (57K) 1/ 5/00 Period peas. Pea broth. Recipes.
http://www.florilegium.org/files/FOOD-VEGETABLES/peas-msg.html

Then again, there is probably good a reason that the New World beans so
quickly replaced the European beans.

I'm not sure if you were looking just at food gift ideas or not, but
here are a few more files in the Florilegium that might be of use:
food-gifts-msg (11K) 1/31/00 Period food items that make good gifts.
http://www.florilegium.org/files/FOOD/food-gifts-msg.html
baby-gifts-msg (20K) 4/13/98 Period-type and SCA-useful baby gifts.
http://www.florilegium.org/files/CHILDREN/baby-gifts-msg.html
Pennsic-gifts-msg (8K) 9/10/99 Some gift ideas for those going to Pennsic.
http://www.florilegium.org/files/PENNSIC/Pennsic-gifts-msg.html
largess-ideas-msg (51K) 11/30/00 Ideas for largess and gifts. Royalty gifts.
