King Arthur Flour runs a free baker's helpline for questions like this,
in case the list fails to come up with the answer.
Also they sell yeast in bulk (Red Star in bulk is 4.75 for one pound and
8.95 for two pounds; you can store it in the freezer). They also sell Ed
Wood's updated book on sourdoughs that is called Classic Sourdoughs, A
Home Baker's Handbook. You can also interlibrary loan a copy  from your
library.

One thing to keep in mind about sourdoughs is that some are fast acting
and some are rather slow. They also can vary widely from batch to batch
depending on weather and temperature in the kitchen and amount of time
they are left to rise. Wood goes into these aspects in his book.
