Well, first you start by killing them ;-) For that part of your job, you're
going to need people who are good at cleaning fish. I know how to do it, but
I'm not particularly efficient at it. Plan on purchasing some cleaning
boards and filet knives, though- they make it a lot easier.

As far as recipes go, I'd hafta look through my collection. Any idea of what
time period or country you want to work with?

I'd love to help on a project like that, but I'm a bit far away to do much
more than show up and help in the kitchen. Anybody know what dates Lent will
be? I'm also committed to help Avraham with the Tavern feast the first
weekend in March, so it couldn't be then.

BTW- can you send us/me the information- store name, address, phone number-
of the store where you found the suckling pigs? That's one option we were
thinking about, and thinking hard, for the Tavern feast.
