Are you doing the foil-wrapped or the bird-in-the-bag? You need to open it
to brown sooner. And so you have the legs trussed up while roasting? That
seens to help too.

I have always done my turkey in foil, but I open it earlier than the
cookbook says, and turn down teh heat just a mite, to slow the browning.
The one year that I discovered too late that I didn't have enough foil, I
ended up doing it hte traditional way, basting it religiously, according to
my old Betty Crocker. It tasted good but was dry-dry-dry!
