Ignore this if I am simply repeating somebody else, but I read this at work,
and it is now monday morning...


Paneer happens to be the middle eastern/indian name for a non-rennet cheese.
Many europeans now use it as a generic term for non-rennet cheese, as well
as a lot of american fromagiers.

who knows a woman who raises champ. dairy goats and makes what everybody
says is incredible cheeses and paneers. To me they all smell like goat piss.
so I wouldn't know.
