Dear Isabetta,

No inconvenience, really! That's what we're here for!

I think there is a misunderstanding about the word 'redaction'. What we ont
eh list call teh redaction, is teh recipe worked out with modern terms and
measures. In the _Medieval Kitchen_, there are three versions of the same
recipe- the original, which is in the back of the book, in the Italian or
French, which ever it is in. In the main text of the book, there are the
other two versions. Directly under the title ia the English translation of
the original text- this *is* the 'unredacted version'. It is a translation,
and nothing but. it has not been altered or redacted, or adapted. Then
below it there is and explanatory text, and then below that you will find
their redacted version.

The 'unredacted version' is right there- It starts out with "If you want
some gnocchi,".  This is the direct translation of the Italian text you
quoted. It is not  redaction, only a translation. The redaction starts on
the next page, with teh list of ingredients and amounts, with "Mash the
cream cheese," beginning the instructions.

If you are planning to do a redaction from scratch, start with the
translation on page 63, and just don't turn the page! ;-)

(Anyone ever notice the very well-behaved horse on the front cover? Can you
imagine what OSHA would say?)
