Caponata is usually okay if not too sweet (some versions include
sugar, some don't); I prefer the Jewish "eggplant caviar" variant.
However, I usually make a recognizable ratatouille sans eggplant. One
could argue it is then not ratatouille, but I'll leave that to others
to worry about.
